Mesclun with Cucumber and Feta
serves 4
Ingredients
- 2 T tomato juice
- 1 T rice vinegar
- 1 t olive oil
- 1/2 t sugar
- salt and pepper
- 6 C mesclun
- 1/3 C English cucumber, thinly sliced
- 2 T feta cheese
- 2 T green onions, thin slice
Instructions
- Whisk the tomato vinegar, oil, and sugar together in a bowl. Season to taste.
- Mix the mesculn, cucumber, cheese and onions into the dressing.
- Plate and serve chilled.
